Traditional English Breakfast

This was wonderful! I must have been English in another life because I thought this was fantastic! I made it for dinner instead of breakfast because I don’t think my toddler would have been a fan of beans in the morning. It took some coercing to get her to try it anyway, but when she did, she liked it. The only thing I didn’t like about this was that I had to use the broiler to make the toast. I am notorious for setting bread on fire from the broiler! But not tonight.
Anyway, B and I loved this and I will definitely make this again. I enjoyed taking a bite of several things at once and letting the flavor marry together in my mouth. So delicious!

Scarlet Roasted Vegetables

This dish from the superhero section of The Kind Dietsounded good….but, sadly, my family thought this meal left something to be desired. It had a weird taste and we couldn’t figure out what it was. Maybe the lemon juice? I’m not sure. I don’t think I will ever make this again. My family refused to eat most of it and I ended up eating the leftovers so I have had my fill of this recipe. At least it looks pretty!

My Favorite Cupcake

I decided to make these cupcakes from The Kind Diet to celebrate baby J’s four month birthday!


A was in charge of the dry ingredients, as usual, and I was in charge of the wet ones.


Add the wet to the dry and stir to combine.


Pour the batter into the prepared cupcake pan and bake for 18 minutes.

Next, let them cool and then frost them! A wanted to have blue frosting so I added some food coloring. I think they turned out really pretty. And they look nice and springy!


These were fantastic! The agave nectar gave the cupcake an almost caramel flavor that was wonderful. We all enjoyed this treat and now we can’t wait for baby J’s fifth month birthday so we can make these again!

Smoothie a la Alicia

B bought a bunch of baby bananas and I had no idea what to do with them. So I decided to make this from The Kind Diet because it says to use 3/4 of a banana. I used 4 baby bananas instead!

You add all of the ingredients to the blender and hit liquify! However, don’t have your four month old in the kitchen with you because it will scare the poo out of him. Anyway, I thought this was pretty tasty. The recipe calls for a cinnamon stick, but next time I think I’ll leave it out because I didn’t like the texture. It felt like I was chewing on tree bark. Other than that, yum!

Mom’s Granola

I made this to put in my doula bag for a pick me up when I have to be in the hospital for long hours with laboring moms. It makes a bunch, which is nice because I can put a jar in my bag for my clients as well.

Here are the ingredients that I used to make this delicious recipe from The Kind Diet

First, you toast the oats for a few minutes. Then you add the oats to the dry ingredients.

Add your wet ingredients.

Put it back in the oven and toast some more!

Pour in a bowl, add some almond milk and enjoy!

Everyone loved this! I poured about half of this into a jar for B to take to work and I’m told that he thoroughly enjoyed munching on this while slaving away in front of his computer. I also shared this with my client and her husband and they both loved it as well. The husband made the comment that “everything I make is so delicious!” Everything he has tried has come from The Kind Diet. Thank you Alicia Silverstone!
