This recipe is one that my husband picked out from one of my new cookbooks! It comes from Home-Cooked Vegan Comfort Foods by Celine Steen and Joni Marie Newman. It was really easy to make and tasted delicious! All three of my picky eaters really enjoyed this dish. Baby J ate about three or four helpings! Boys eat so much! I hope I can figure out how to grow a garden by the time he’s a teenager. Last summer we joined a CSA and that was wonderful, but with the way he eats, our week supply of produce might last two days.
Anyway, this recipe was fantastic and I look forward to making more recipes from this cookbook.
