Five years ago I never would have thought that I would be a vegan. I loved McDonald’s, chicken and ice cream…my god I loved ice cream. But every time I would eat meat, or something that came from an animal for that matter, I felt terrible. Not emotionally, but physically. It wasn’t until I had my first child that I decided to change my diet from the standard American diet (S.A.D.) to something more healthy and beneficial to my family.
It started with a cookbook. Skinny Bitch in the Kitch got me started in the kitchen and eager to learn more about the vegan lifestyle. I found The Kind Diet in November of 2011 and I have since become pretty obsessed with the book. Most of the recipes that I make now are from this book, so a lot of my posts will likely be based off of creations inspired by this book. If you have never read this book I encourage you to do so. It’s fantastic and it changed my life and the life of my family for the better. We are healthier and make better decisions about our health and the environment.
I have been vegan for about a year and a half now and wanted to share my story. This blog is dedicated to different recipes that I have tried and how my family responded to them. I am going to try to post every week with new recipes that I have tried…so wish me luck because I have a 3 year old and one on the way. But no matter what, I am determined to raise them vegan and give them the best chance at a healthy future that I possibly can.
Let the adventure begin!
